noma Mexico pop-up
In 2017, I consulted for noma in preparation for their seven-week residency in Tulum, Mexico. I travelled with beverage director Mads Kleppe from Mexico City, to Morelos, Hidalgo, Oaxaca, Merida, and Tulum on a research trip to select beer, wine, mead, mezcal, coffee, and other ingredients to be featured on the noma Mexico menu. At the beginning of the pop-up, I worked service in the outdoor open-air restaurant for two weeks and provided the noma FOH team with training on mezcal.
